Ingredients:

Fresh Fish med/large fillets or four small fillets. (striper bass or whatever*)
- 1
scotch bonnet pepper minced (habanero will work but not as flavorful)
- 1/2
cup
fresh orange juice
- 1/4
cup
plus 1 Tbl. Orange Blossom Honey
- 1/2
olive oil to cook
- 1
pinch of salt

Directions:

In a small sauce pan saute the hot pepper in a little olive oil over medium heat. Add the orange juice and bring up to a simmer. Simmer for 3-4 minutes and then add the Orange Blossom Honey stirring quickly to incorporate. Simmer another minute or two until the glaze has a light syrup consistency. Add a pinch of salt to focus the flavors. Pour over fish for the last three minutes of cooking (oven or grill). Garnish top with fresh herbs of choice (usually a bit of thyme and/or rosemary) and eat.
*may be best with a firm white fish like snapper or black bass but we use what we get.
