Apricot Butter

Makes 12 servings

  • 1/2 cup butter or margarine, softened
  • 1/4 cup honey
  • 1/4 cup finely chopped dried apricots
  • 1/2 teaspoon grated fresh lemon peel

Whip butter until fluffy; add remaining ingredients and mix well. Serving size 1 Tablespoon.
